Claridge’s is set to part ways with head chef Daniel Humm over a disagreement with Humm wanting to shift to a fully plant-based menu. Humm opened fine dining restaurant Davies and Brook at Claridge’s in 2019 and has since earned a Michelin star. In a statement on Twitter, Claridge’s said embracing a fully plant-based menu “is not the path we wish to follow here” and “have mutually agreed to go our separate ways.” Davies and Brook will continue to operate under Humm till December. “We will update on future plans at Claridge’s in due course,” the statement added. Humm also helms the three Michelin-starred Eleven Madison Park in New York. Earlier this year, Humm changed the restaurant’s menu fully plant-based as he believed meat was not sustainable.
